Unlike industrial winemaking that relies on mechanical harvesters, natural winemakers pick their grapes by hand. Yes, it’s more labor-intensive and costly but it ensures that only the healthiest, ripest grapes make it into the bottle. Hand harvesting allows for better selection and preserves the integrity of the fruit, which ultimately leads to higher-quality wine.
Natural Fermentation, Actually
Once harvested, these carefully selected grapes undergo fermentation using only the wild, native yeasts found on the grape skins and in the vineyard itself. Natural winemakers skip the lab-cultured yeasts that are often used to standardize flavor. Instead, they let the wine express its true terroir, the character of the land, climate, and grape… without manipulation. This results in wine that’s vibrant, unique, and alive.
