Cheers to the start of the holiday season
Is it just me or does it feel like we dove head first into winter here in Vermont? For better or worse, this weather has us falling full swing into the holiday spirit. Festive gatherings beginning to dot the calendar and silver bells are already ringing… or that just might be the second glass of this beautiful Vita Vivet Cava bubbling in our ears. This month we also have two stunning reds from Spain, including something a little experimental for our Cork Dork members.
So, as we settle deeper into winter and inch toward the shortest day of the year, these bottles invite you to gather, to celebrate, and to slow down long enough to notice the seasonal glow. 1) Vita Vivet Cava Brut Nature (NV), Catalonia, Spain

About the Producer: Created by Celler Jan Vidal, Vita Vivet leans into organic farming and traditional-method winemaking, producing elegant, honest Cava from 50-year-old vines. These are bubbles rooted in place—bright, mineral, and quietly expressive.
About the Wine: Brut Nature means super dry, no dosage, no fluff, just clean, precise sparkle. Expect zesty citrus, orchard fruit, and perfect, fine bubbles that make every sip feel like a small celebration. This is your fireside aperitif, your “we made it through another year” toast, your “I need something festive but unfussy” bottle.

2) Flores de Callejo 2020, Ribera del Duero, Spain
Wine: Red // Grapes: Tinto Fino (AKA Tempranillo) // Club: Vin de Soif & Cork Dork
About the Producer: Bodegas Félix Callejo is a family-run winery now in its second generation. Their vineyards sit at high altitude in Burgos, where varied soils—from limestone to gravel to clay—give their wines depth and lift. Their philosophy is rooted in ecological farming and honoring the raw purity of Tinto Fino.
About the Wine: Flores de Callejo is focused on freshness and fruit. This wine is all wild berries, soft spice, violets, and a little balsamic swirl around a lively palate, with just enough richness to warm you up on a cold night. It’s hearty yet active, and crazy aromatic, basically the red wine version of someone wrapping you in a big, cozy scarf.

3) Bigardo “Vino Tinto Experimental,” Toro, Spain

About the Producer: From Bodegas Bigardo, this experimental cuvée breaks every rule it can (in the best way). Old vines, sandy + calcareous soils, spontaneous fermentation, unfined, unfiltered, vegan-friendly, and low-sulfur—this is a winemaker having fun while knowing exactly what they’re doing.
About the Wine: Bigardo is dark, juicy, and a little wild. Think black fruit, dusty tannins, warm spice, and a texture that fills the whole palate. It’s bold without being heavy, polished without losing its edge. A perfect solstice bottle, deep, shadowy, and made for long nights.
